Coorgi Roti


Shallow-fried rice flour bread


Prep Time45 minutes


  • 230 g rice flour
  • 300 g basmati rice, well cooked, ground with a little water to make a smooth puree
  • ghee for shallow-frying
  • salt to taste


1. Sift the rice flour and salt together in a bowl. Add the rice puree and a little water if required
to make smooth pliable dough,
2. Divide the dough into 10 equal balls. Roll out each ball into a 6" disc which is 1/6" thick
3. Heat the ghee on a flat pan; place the disc flat on it and fry making sure that dark brown
specks do not appear on the underside. Turn the disc over and pour some ghee from the
side to shallow-fry. Remove and repeat till all the discs are fried.
